Acharya’s Vegetable Curry

Ingredients for 4 people:

2 tablespoons ghee or olive oil

1 onion, peeled and quartered

2-3 cloves of garlic, peeled and crushed

1 heaped teaspoon ground coriander

1 heaped teaspoon ground cumin

1 heaped teaspoon curry powder

1 heaped teaspoon turmeric

1/2 teaspoon cinnamon

1 teaspoon salt

1 small chilli, finely chopped (optional)

sprig of fresh curry leaves (optional)

 2 carrots, cut into thick slices

2-3 potatoes, peeled and cut into cubes

2 zucchinis, cut into thick rounds

1/2 head of cauliflower, broken into florettes

2-3 tomatoes, cut into quarters

handful of green beans, topped and tailed and cut into 1/2

any other vegetable that might be in season like pumpkin, squash, eggplant…

Fresh herbs like parsley, coriander, mint - finely chopped

Method:

Heat fat, add onion and stir for a couple of minutes. Add all the spices and fry very briefly, till just fragrant.

Add all the vegetables and cover with a little water, add salt. Boil till soft but not mushy. Stir occasionally. Add freshly chopped herbs at the end, just before serving.

 Serve with plain rice. Enjoy! Tastes even better the next day.
